Product Description

Brisket Plate is prepared from a Brisket (Full, PE or NE) by the removal of the cutaneus trunci, both pectoral muscles and the deckle. The Brisket Plate will consist of the sternum, costal cartilages, Brisket Strip (M. transversus thoracis), rib bones and attached intercostal muscles.
